We start off by fermenting black strap molasses, using red wine yeast to promote fruit flavours, the molasses wine is pot stilled and blended. The distillate goes through our unique maturation process, whereby it is aged on a combination of French and American oak and finally gets finished in refurbished red wine barrels, before it is bottled straight from the barrel.
Vanilla and floral notes on the nose. Smooth caramel, dark chocolate and dried stone fruit on the palate, with a light savory molasses and cacao finish.

Our spiced Rum is a master blend of column and pot stilled rum, made from fermented treacle 1 syrup. Spiced and flavoured with a combination of 11 spices, fruits and botanicals. Finished with a balanced amount of caramel. Aged in stainless steel tanks and then rested in old bourbon barrels.
Sweet and spicy citrus nose with the taste of baked pineapple, mango and cinnamon on the palate and a smooth caramel finish.

Our White Rum is fermented in the same way as our Cape Rum, selected cuts goes through a second distillation and is blended, aged and filtered to make this unique, Jamaican inspired White Rum.
Summer fruits and caramel on the nose, starts with the taste of berries on the palate and ends with a smooth tart finish.
